What is the chef's secret to flavorful sauces when tomatoes are not at their peak? SAN MARZANO T

San Marzano tomoatoes originated from their namesake, San Marzano, near Italy. The first seeds are believed to be a gift from the Viceroyalty of Peru to the Kingdom of Naples in 1770. While imitated, but not duplicated, the United States version is commonly known as the "Roma" tomoato, which is actually a hybrid of the San Marzano and other tomatoes introduced into the U.S. around 1955. Make no mistake folks, there is no substitute for the rich, sweetness and depth of flavor that comes from 100% San Marzano tomoatoes.

What is the freshest ingredient coming from local fishing boats? SQUID from Monterey.
